The Ancient &
Remarkable Story
of Hops

Long before Bia Saigon Special was poured under a Caribbean sun, the humble hop plant was already changing civilizations. Humulus lupulus — the flowering vine whose cone-shaped blossoms give beer its bitterness, aroma, and soul — has a history stretching back thousands of years.

The first written record of hops cultivation dates to 736 AD in the Hallertau region of Bavaria, Germany, where monks grew it in monastery gardens. But the plant itself had been wild for much longer — ancient Chinese writings mention it as a vegetable, and Viking-era Scandinavians used it in their ales.

"The hop is a weed turned king — from wild riverbanks to the world's most prized breweries, its journey is one of human desire and discovery."

It wasn't until the 13th and 14th centuries that hops began to replace the spice blends (known as gruit) that had previously preserved and flavored ale. Hops proved superior — their natural antimicrobial properties extended shelf life dramatically, and their complex chemistry created flavors no other ingredient could match.

By the 17th century, hopped beer had spread across Europe. England embraced hops enthusiastically despite initial resistance — King Henry VIII reportedly banned hops from royal breweries, calling it a "wicked weed." He was overruled by taste.

Today, the Yakima Valley of Washington State — home to the hops that make Saigon Special — produces over 75% of all American hops. The volcanic soil, warm days, and cool nights create hops of extraordinary quality: bright, floral, and boldly aromatic. These are the very hops that travel from the Pacific Northwest to breweries in Vietnam, and then make their way to your hands on a sun-drenched Caribbean afternoon.

How Beer Is Made

Every bottle of Bia Saigon Special is the result of a meticulous, centuries-old process — elevated by modern precision and exceptional ingredients.

Malting

High-quality barley grain is soaked in water to begin germination. This activates the crucial enzymes that will later convert grain starches into fermentable sugars. The germinated grain is then kiln-dried to halt the process — creating "malt."

Temperature: 50–80°C · Duration: 3–5 days

Mashing

The malt is milled and mixed with hot water in a mash tun. Held at precise temperatures between 65–70°C, enzymes break down complex starches into simple, fermentable sugars — creating a sweet liquid called wort.

Lautering & Sparging

The liquid wort is separated from the spent grain husks. Hot water is then "sparged" (sprinkled) through the grain bed to rinse every last sugar from the grain, maximizing efficiency and yield before the boil.

Boiling & Hopping

The wort is boiled vigorously for 60–90 minutes. This is where Yakima hops are added — early for bitterness, mid-boil for flavor, and late for their incredible floral and citrus aromas. The boil also sterilizes the wort.

Fermentation

The cooled wort is transferred to fermentation tanks and yeast is pitched. Over days to weeks, yeast consumes sugars and produces alcohol and CO₂ — transforming sweet wort into beer. Temperature is precisely controlled for the desired flavor profile.

Yeast temp: 10–22°C · Duration: 1–3 weeks

Conditioning & Packaging

The young beer undergoes cold conditioning — maturing at near-freezing temperatures to allow flavors to harmonize, proteins to settle, and carbonation to develop. Finally, the beer is filtered, carbonated, and packaged into the iconic Saigon Special bottle — ready for the Caribbean.
